First Post: First Recipe

I made this delicious chicken and pasta recipe last night!


Chicken and Penne with Basil Pesto Sauce

What You'll Need:
2-4 cloves of garlic depending on your taste buds**
One 4oz tube of Gourmet Garden Basil
3-4 oz of grated Parmesan Cheese (extra for topping)
One 15 oz package of skim Ricotta Cheese
2-4 TBSP of Olive Oil (depending on sauce consistency)
Salt and pepper to taste
1 lb of Chicken breast cut in strips
1 box of penne pasta (I used whole wheat)

To Start:
Cook chicken in skillet until no longer pink throughout (~3 minutes on each side), when chicken is almost cooked, add garlic cloves (whole) to the chicken to toast
Follow directions on box to cook pasta
Start on the  Sauce

The Sauce:
Once the garlic has toasted, combine garlic, basil, Parmesan, Ricotta, and olive oil in blender. Blend until smooth, you may have to add more olive oil to make it more smooth. Add salt and pepper to taste!

Adding It All Together:

Once sauce has blended, add it to the chicken in the skillet. When pasta has cooked, drain and add to skillet. Mix all three components together and top with Parmesan Cheese!

**If your sauce taste too much like garlic, you may add a PINCH of baking soda to reduce the strong taste of the garlic!
